I am afraid of cooking meat and therefore we eat a largely vegetarian diet.  It just seems to easy to mess it up.  It can be overcooked!  It can be undercooked!  And I know that to make a juicy piece of meat it's important to not cut it open and to let it rest and all of that but how can I know if I have appropriately cooked the meat if I cannot open it up to see?

Nevertheless, I have been craving burgers and the last few times we've been to Shake Shack have been extremely disappointing.  Once they forgot the pickles and onions.  It was terrible.  So we picked up some ground beef and decided to try our hand at burgers from home.  Really this is not a recipe but just some awesome things that go with burgers, and I was so pleased with how these turned out that I am sharing them here with you!

Burgers with Sriracha Mayo (makes 2 giant burgers)
 
1 pound ground beef
beefsteak tomato
1 pickle
red onion
cheddar cheese
1/2 an avocado
2 potato buns
3 tablespoons mayonnaise
1 tablespoon Sriracha
1 tablespoon ketchup
 
Mix up the mayo, Sriracha and ketchup.  Season the beef with salt and pepper, and form into two giant patties.  Or use less beef if you'd prefer smaller patties.  Make an indentation in the middle of each burger (all the burger pros say to do this so your burger will be nice and flat and toppings will not just roll off of it).  Cook your burger on a fancy grill pan, so it will have lovely grill lines.  I cooked ours for 3 1/2 minutes on each side and then added a slice of cheddar and cooked it for another minute.  Our burgers were way too rare so I would recommend to cook yours for a little longer if you are making giant burgers.
 
 
 
While your burgers are resting, toast the potato buns and slice up all that other good stuff that's going to go on your burger.  Slather the potato bun with Sriracha mayo, and pile up your burger and everything else into one gigantic amazing tower of joy.
